Eggstra Easy Easter Inspiration

Love and joy are abundant in the Easter season, and so is the work put into making it memorable! Growing up, there was never a holiday in my family that didn’t have a beautifully adorned dining table with incredibly prepared meals and plentiful desserts. By far, Easter was my favorite holiday. Bright colored flowers, spring accented place settings and the signs and warmer days ahead. 
Both of my grandmothers, my mother, and my Aunt Carol loved to set a table, and boy, could they all cook…like really cook! The amount of love and time that went into each and every holiday was immeasurable, from hours of polishing silverware and china to preparing the décor and food for days, if not weeks, in advance. 
My love for cooking and entertaining started shortly after graduating college, when I bought my first home. I reluctantly offered to host my first holiday dinner for my father's birthday on Christmas Eve. I nearly immediately appreciated the efforts in making a holiday and meal so special and what others had done for me in years prior. I was hooked. Since then, all I have wanted to do and have tried to do was to return the favor, making meals and holidays at my home unforgettable. Food was our way of showing love.
Although this year’s Easter celebration is so very different in the fact that we can’t all share the love, laughter and cherished memories across a dining table with all those we hold so dear, remembrances of holidays past will be greatly reflected on with the hope of a love filled celebration together again so very soon. 
Below are the details of my Easter this year that I shared with the one I love. Best wishes for a bright and beautiful day…from my home to yours.

FOOD

  • Cotton Tail Prosecco – Cotton Candy and Pink Prosecco…and voila! Make sure to use a glass that has a tapered top to prevent the cotton tail from falling into the prosecco and dissolving. You can, however, add the cotton tail to the drink before sipping for a sweeter flavor.
  • Chocolate Bird’s Nests – This is an easy three ingredient recipe. I replaced the almonds in this recipe with Cadbury Mini Eggs for added color to match my theme.
  • Carrot Cake Jelly Roll – Jelly Rolls are easier to make than they look and make for a beautiful presentation when sliced. I tinted the shredded coconut pink in this recipe by mixing in a couple drops of red food coloring in a ziplock bag with the coconut.
  • Stuffed Crown Roast (Pork or Lamb) – You can make this from scratch (Tyler’s is the absolute best!) or order it pre-stuffed from a gourmet food company. You can alter the stuffing flavors adding seasonal vegetables and fruits to your liking. Garnish the roast with whatever you have on hand - rosemary, kale, roasted garlic or roasted citrus. And don't forget your digital meat thermometer...it's an absolute must when cooking any roast. Over cooking is overrated!
