Shake your kitchen shamrock with these magically delicious treats that go above and beyond the typical corned beef and green beer.  

Fields of Clover Pesto Bites

How lucky….it only takes 3 simple ingredients to create these adorable shamrock apps.

Ingredients:

  • Puff Pastry, thawed

  • Pesto

  • 1 Egg, whisked

Preheat oven 400°. Place thawed pastry on a floured pastry mat or clean surface. Roll out slightly to 12 inches by 14 inches. Cut a 1/2 inch strip off the longest end to save for "clover stems". Brush top of pastry rectangle lightly with pesto until entire surface is covered. Roll up each long end into to the center so that they meet in the middle. Cut roll into 1/2” pieces. Pinch bottom of each piece so that it shapes into a heart. Brush each heart with the egg and place 3 together to form a clover on a parchment lined baking sheet. Add a 1 ½ to 2 inch “stem” and brush entire surface with egg to adhere to the clover. Bake 10-15 minutes or until golden.

Top o’ the Mornin’ Cheese Dip

It’s easy being green when you taste this good! 

Cheese Dip:

  • 16 oz Cream Cheese Softened

  • 2 Cups Shredded Cheddar Cheese

  • 2 Tbl Mild Salsa

  • 3 Tbl Minced Yellow Onion

  • 2 tsp Ground Cumin

Garnish:

  • 8 oz Sour Cream

  • Romain Lettuce Leaves

  • Cucumber, sliced and halved

  • Multigrain or Everything Cracker

  • 1 Herb Sprig 

  • Green and Yellow Food Coloring

In a mixing bowl, combine cream cheese and cheddar. Mix well on med-high speed until light and fluffy. Add salsa onion and cumin. Transfer to a piece of plastic wrap and shape into the form of a cylindrical hat. Chill until firm, 2-4 hours. Transfer to a serving platter. Mix sour cream and food coloring until desired color is reached. Spread evenly over “hat” shaped cheese. Garnish with cucumber slices around the bottom as the band, a cracker as the buckle and lettuce leaves as the hat’s brim. Add an herb sprig or greenery to the top to resemble a clover. Serve with your favorite crackers and crudités .


Shamrock Shaker Martini

The adult version of a McDonald's Shamrock Shake, and worth every coin in your pocket.

Spiked Shake:

  • 3 Cups Vanilla Ice Cream

  • ½ Cup Crème De Menthe

  • ½ Cup Milk

  • ¼ tsp Peppermint Extract

  • Green and Yellow Food Coloring

Garnish:

Mix turbinado sugar and a touch of edible gold dust in a shallow dish. Dip your finger into a bit of honey and run around the rim of each glass. Dip the rim into the gold dusted sugar until fully coated. In a blender, mix all the shake ingredients, along with desired amount of food coloring, and pour into each glass.

Sparkling Shamrock Cookies

Luckily, this staple sugar cookie recipe can be altered in color for any of your favorite holiday cookie cutouts, and garnished with coordinating edible glitter or sugar.

Ingredients:

  • 3 Tbl Whipping Cream

  • 1 Tbl Green Food Coloring

  • 3 ¾ Flour

  • 2 tsp Baking Powder

  • 1 cup Butter, softened

  • 1 Cup Sugar

  • 2 Eggs

  • 1 tsp Vanilla 

  • 1 Tbl Edible Green Tinker Dust

Stir together whipping cream and food coloring in a small bowl. In a large mixing bowl, blend softened butter and sugar on med-high speed until creamed. Stir in eggs and vanilla and mix well. Add flour and baking powder until combined, then whipping cream mixture until desired color is reached. Cut dough in half. Cover each half with plastic wrap and chill for 1-2 hours. Preheat oven 350°F. Line 2 baking sheets with parchment paper. Roll out dough on well-floured surface to ¼ inch thickness and cut into with floured shamrock cookie cutter. Arrange cookies one inch apart on cookie sheet and bake until done, 5-10 minutes depending on the size. Allow to cool completely. Place edible green glitter in a small bowl and lightly dust cookie surfaces using a Wilton dust brush. These can also be garnished with colored sugar prior to baking or dusted with confectioners sugar after cooled.
